Serving Up a Safer Way to Handle Cash
February, 2026

Munson Group
Introduction
For years, general managers at a growing restaurant group often ended their shifts with the same nerve-wracking routine: driving bags of cash to the bank after midnight. It only took one close call for the company to rethink their approach. They turned to a partner with the technology and experience to make cash handling safer, faster, and far more consistent across their growing network of restaurants.
The Challenge
Munson Restaurant Group operates more than 35 restaurants across the New York tri-state area, south
New Jersey, and eastern Pennsylvania, including Buffalo Wild Wings, Buffalo Wild Wings Go, and Sonic
Drive-In locations. With so many moving parts and locations, a new challenge started to grow behind the scenes: managing cash consistently and securely.
Managers at each restaurant were still doing things the traditional way: counting bills, logging deposits,
and making those late-night trips to the bank. For late-night locations, that sometimes meant runs at 2 a.m. after big sporting events. The process took time away from customers and created safety risks for staff.
Meanwhile, cash often sat in safes for days, making it harder for the accounting team to track what and
when deposits were made. What worked for a handful of restaurants simply wasn’t sustainable for a
growing regional brand.
The Solution
After one of the general managers at Munson was held up during a late-night trip to the bank, owner Jack Litman knew something had to change. The risk of sending employees out after hours with large sums of cash simply wasn’t worth it. That close call pushed the team to look for a safer, smarter way to handle cash across all their restaurants.
Looking for a safer way forward, the team partnered with Brink’s to modernize cash handling across all locations. Brink’s installed smart safes that automatically count and secure cash as it’s added, keeping it protected until Brink’s messengers arrive to collect it for processing. Once cash is securely added to the smart safe, the business sees the corresponding credit reflected in its bank account within two business days.
The Results

Implementation
Brink’s worked closely with the restaurant group to bring the new cash management system online at every location. Installation was straightforward, and managers were trained on how to use both the smart safes and the online portal. The process allowed each restaurant to transition quickly without disrupting daily operations.

The Results
Partnering with Brink’s has helped the restaurant group create a safer, more efficient way to manage cash across its growing network of locations. What used to require late-night bank runs and manual cash counts is now a streamlined process that saves time, reduces risk, and gives the accounting team better visibility into day-to-day operations.
According to Litman, managers save roughly 30 minutes a day per location by eliminating the time previously spent preparing and transporting cash to the bank. That daily time savings has meaningfully reduced operational burden and allowed teams to focus more on guests and day-to-day operations.
The solution also brought more accuracy and control. Through Brink’s secure online portal, the accounting team can log in and view cash activity across every restaurant in real time. The portal shows when cash has been added to each smart safe and when it has been picked up for processing, giving the team a clear, up-to-date picture of their cash on hand. This visibility helps them track activity more easily, spot potential issues early, and spend less time reviewing records at the end of each day.

Key Outcomes
Time savings
Each restaurant saves about 30 minutes a day on cash-handling tasks that previously involved counting, logging, and bank runs. Across 35 locations, that adds up to roughly 10,000 minutes per year, or about 167 hours of manager time.
Safety improvements
Employees no longer travel with cash after hours, which reduces personal risk and creates a safer environment for staff.
Efficiency and control
The online portal gives the accounting team a clear view of cash activity across every restaurant, helping them stay organized and quickly confirm daily totals.
Labor savings
Litman estimates that the time saved equates to roughly $3,000 in manager labor each year, in addition to productivity gains from keeping teams focused on daily operations.
Conclusion
Today, Brink’s continues to support the restaurant group’s growth, helping ensure each new location opens with the same consistent and secure cash process that has already proven to work.
What started as a safety concern has become a long-term operational advantage that saves time, reduces risk, and gives the team the confidence to focus on what matters most: serving their guests and growing their business.
